What did you eat for supper?

So it has been suggested that we try to make this a regular once a week post. Knowing myself, I am most likely going to phrase it along the lines of "what did you have for supper last night?", but I think that people should be free to pick and choose their favourite meal of the week.

So (a day late), what was your favourite meal this week?

For me it was actually tonight's supper:

Rigatoni with a cashew based cream of mushroom sauce, a side of steamed broccoli. A nice IPA to wash it down and a dessert of brownie a la mode.

Nothing exotic or super special, but comforting, filling and tasty. What more can you ask for?

This week the best was probably nachos that I made a few nights ago. Red capsicum, red kidney beans, tomatoes, plenty of cumin, chilli powder and coriander, some sort of canned 'chilli bean' thing that my SO got because it was actually cheaper than red kidney beans but had the same amount, plus tomato, spices and capsicum which I pureed in the food processor. Whacked onto corn chips and with some nacho-style 'cheese' on half of it, baked in the oven, and served with guacamole. Yum.

Otherwise a green curry I made which had delicious fennel. But I can't remember if that was this week or the previous one.

Last night we had two pizzas. One just Daiya Cheese, one with daiya and peppers and onions. MMM

I made a tempeh bolognese a few nights ago, and that would probably be my favourite. I included red wine and fresh basil, and it took more time than most of my cooking, because I simmered it for ages to get the finely diced tempeh to be as softened as possible.

Oh! And I went to a potluck style roast veg dinner Sunday night, and that was awesome.

quinoa tabouleh with Udo's Oil and fresh squeezed lemon juice, with garden grown redbor kale, swiss chard, lettuce, mint, parsley, and chives

humous with raw tahini, fresh squeezed lemon juice, EVOO, cumin and paprika with a bit of garden grown basil, with whole grain pita and raw baby carrots and broccoli to dip

with an organic rose frizzante wine!

Favorite dinner was some tofu in peanut sauce and roasted vegetables that I got from the co-op's hot bar.

Between my stop at the farmer's market and my CSA share, a big salad of diced red onions, heirloom tomatoes and cucumbers with a drizzle of raspberry vinagrette.

I prefer EVOO & balsamic vinegar, but this was on-sale and I am a poor grad student.

And a giant glass of ice water with cucumber slices.

yummmm, tastes like summer.
