What was your favorite meal this week?

I think mine was sandwiches we just had for lunch. It featured hot tempeh wings deep fried with oil and covered in hot sauce, mizuna, tomato slices, and veganaise. On white bread.

Not too healthy but delicious!

my favourite meal was this huge salad, and yes I ate the whole bowl in one sitting! Looking back, if I'm going to photograph my food I should use a nicer bowl.Photobucket
from my garden:
lettuce, kale, swiss chard, spinach, chives, pink petunias, tomato
dressing:
Udo's Choice Oil
raw tahini
miso paste
agave nectar
cumin
fresh cilantro
walnuts
mustard powder
balsamic vinegar
lemon
sea salt

with golden and sultana raisins! it was SO yummy, seriously, try this dressing!

i'm sorry for the huge picture, guys! i tried resizing it on photobucket but it didn't affect the link... :(

also, forgot to mention the carrots in used in my salad - offsets the tangy dressing.

local eggplant parm soup...

Some friends and I grilled eggplant slices out of our csa, and made a sauce of diced CSA tomatoes, shallot, fresh parsley, and some spices.

We layered the thick slices of grilled parm and spooned the soupy-fresh tomato sauce over top in a shallow bowl and then sprinkled a bit of rennet-free mozzarella cheese on top.

YUM.

Paired with a nice red wine and then some chocolate mousse for dessert.
