OK, not really, but I was curious about copying an idea from another blogger that I follow. She does a "make it work Wednesday" where she lists a couple of basic ingredients and asks people to come up with ideas on how to use them together.

Today is, obviously, not Wednesday, and if people like the idea, maybe we will move it to Wednesday to help perk things up a little in the middle of the week. But for not, Friday it will have to be.

This week was green beans and mushrooms.

You don't need a full recipe, but if you have one that fits, post it!

Because my son has been all for creamy sauces lately, I would likely make a mushroom infused cashew cream and cover some braised (or maybe gently steamed) green beans and caramelized onions with it.

The usual mushroom cashew cream in these parts has been 1 cup of water with 1 cup of raw cashew in the blender for several minutes to get it smooth. While that is blending, sautee up some mushrooms (I like a mix of button, oyster and portabello, but really anything will do), after the mushrooms are cooked, take them off the heat, and caramelize your onions. Reserve some of the mushroom (maybe ~1 cup and toss the rest in the blender. After the mushrooms are added, season the sauce to taste with salt and pepper.

Cook up your greens and then combine everything to serve.

i was going to suggest a string-bean casserole, which is similar.

Hm... I don't like mushrooms, but if I did I would probably make a thai basil stirfry with rice. Are you one of the Australians though? 'Cause then I suppose it wouldn't be basil season.

Green beans and mushrooms are good in risotto, so I'd go for that :) Mmmm.
